The other day (Tuesday), I put a couple of racks of ribs in the CS with a basic rub of, (salt, garlic powder, onion powder, chili powder, cayenne pepper). Smoked @225 with about 4 oz of Hickory for about 4 hours, foiled and cooked for another 2 hours. I took the ribs out and set them on the counter, after turning the smoker off and unplugging it, (or so I thought).
Went out to check on the dog (he was barking at something) on Thursday AM, and noticed the Polder had a temperature reading of 239 degrees.
Now, I thought, that can't be right, so I looked at the outlet, and it turns out the CS had plugged itself into the socket, and turned itself back on!! I'm freaking out, thinking this can't be good for this smoker to be on for around 50 or so hours straight!!
Well, I unplugged it as fast as I could, took out the grills (once it had cooled down), washed them, and emptied out the wood box (nothing there at ALL). And worried about it the rest of the day/evening.
I was going to smoke a Boston butt (6 lb) that night anyway, so I figured, what the hey?!! At 11:00PM that night, I filled up the woodbox, with about 5oz hickory (I'm out of Mesquite), and set the temp to 250 and went to bed. Pulled it off at 10:00AM the next morning (today), (polder said it was at 185, Close enough for me). So I foiled it and stuck it into the nearest cooler. Me and the boy (my 14 y/o) had it for supper tonight!!!

I guess the moral of this long and drawn out story is......CookShack, makes a fine product that will smoke any meat you have for at least 50 hours with no problems!!
Secondary lesson is >>>Pull the plug and turn your CS off.
