Since I bought my FEC about 7 months ago, I've spent a great deal of time trying to perfect my rubs and sauces. I've ordered different spices and rubs from other people, and I have really "chased" that thing called, BBQ. Last night I was very tired, and just didn't feel like going through my usual preparation ritual, (running everyone out of the kitchen and making everyone promise not to spy on my secret rub), so I just used sea salt and some fresh cracked pepper. This morning, when I took it out of the smoker I was amazed at how it looked and tasted. It is great. I chopped it and added a little finishing sauce and it blew me away. I had a small brisket flat under the two butts, and it looks great too, though I haven't tasted it yet. Has anyone else tried this? What do you think?

When I first got the bbq bug eight years ago, I was looking for the "Magic" rub. I bought books and read everything on the Internet. Tried different bbq sauces. Most things tasted good, but not extra ordinary. I went back to my grilling spices used for years growing up. (Kosher Salt, Fresh Cracked Pepper, and Garlic Salt) This seemed to give me the best flavor, especially on beef. There are times I use a rub with several spice combinations and add chipotle for some heat, mostly on butts and ribs.
Now, I let the FE do it's thing using hickory pellets and my three spices and the food turns out great. Cooking on the FE lets the real taste of the food come through!!
