I just got my smokette Friday at 430. By 4:45 it was being seasoned as per the book. At 8:30 I opened the smokette. All of the wood was now ash.
By 9pm I had an 8.5 pound picnic in the smokette. My question is: Is it normal for all the wood to have burned away so quickly, just slow cooking with heat, after about 4 hours?
Can't wait to get up in the morning and check it out!

Depending on how dry the wood is, I think it is perfectly within reason to think a chunk of wood might be ash in 4 hours. You probably used more like 2 or 4 chunks for that shoulder. Don't worry, it will be yummy.
