I try to smoke just about everything I can think of. But some 20 years ago, when I was first married I brought home a beef tongue and asked my wife to cook it. She said something to the effect that if I wanted to stay married that would be the last beef tongue in the house. So, I not much help there.

However, my thoughts would be to skin the tongue, season with a fairly spicy rub and smoke at 225 till you reach an internal temp of 160. I would be careful about over cooking since the tongue will have basically no fat.
