in the pig box I posted about before. It was tremendous! No smoke, but a really great tatsting piggy.

But one thing I noticed was that this was the smallest pig I had ever used ( 75 pounds ) and the amount of meat was a lot less in proportion to the waste and fat. 75 pound pig gave us about 30 pounds of useable meat. And we picked every scrap of usable meat off this pig.

I guess that makes sense, but it makes it a lot less cost efficient.
