And it came out great. It (5 lb butt) took about 8 1/2 hours to reach 200 degrees at a smoker temp between 210 and 240. Without this site I wouldn't have used a thermometer and wouldn't have known about wrapping the butt in foil and a towel and putting it in a igloo chest. When I unwrapped it, the meat just fell apart. It was juicy, tender, and had a delicious smokey flavor (I used apple wood). I have a offset firebox smoker but I think I will be changing that soon. The CS smoker seems to have everything I'm looking for. I'll definitely be smoking lots more butts in the very near future.
