And it came out great. It (5 lb butt) took about 8 1/2 hours to reach 200 degrees at a smoker temp between 210 and 240. Without this site I wouldn't have used a thermometer and wouldn't have known about wrapping the butt in foil and a towel and putting it in a igloo chest. When I unwrapped it, the meat just fell apart. It was juicy, tender, and had a delicious smokey flavor (I used apple wood). I have a offset firebox smoker but I think I will be changing that soon. The CS smoker seems to have everything I'm looking for. I'll definitely be smoking lots more butts in the very near future. Thanks to all those who have been so generous with their ideas and expertise.

Congratulations Sedagive! As a new CS owner, I can absolutely vouch for everything positive those on the forum communicate about the smoker, manufacturer, you name it....Absolute satisfaction if you decide to go with CS at some point.
