Jeeze, I think I created a monster next door. I smoke some ribs last night on my second attempt I got it. Couldnt eat it all last night so passed it on to my neighbor after he eyeballed my unit over the fence last night to get his opinion. He came to the door just a few minutes ago and his exact words/actions, while rubbing his belly, if I can get ribs like this from you I will never eat them out again". "What you smokin next?" What have I done Eeker

If I like the guy I'll fix stuff for free if it's when I'm cooking, the same thing that I'm cooking and he buys his own ribs and pays me for the rub.


If those requirements aren't met then it's "leftovers only for you buddy!". Problem is.....we don't call'em leftovers till 48 hours. There's never leftovers. Big Grin
Why do your ribs stink? Is it the taste of the rub or are they tough? Try different rubs and try this: make sure to remove the membrane from the back of the ribs, apply rub about 1 hour before cooking (the rub will remove moisture from the ribs if applied too long before cooking) cook at 225 degrees for about 5 hours for baby backs and longer for spare ribs.To check for doneness, push a toothpick or skewer through the meat between the ribs and if it pushes through with little or no resistance, they are done. I like to hang my ribs to cook, cookshack has nice rib hooks for about a buck apiece, cut the racks in half if needed to make them fit. Go light on the wood until you find the right amount for your taste. Good luck!!!
I have to agree with Gregor on the techniques here is a break down.

4lbs 4 1/2 racks baby backs fresh cut
2tbsp each of Cookshack chicken and rib rub
1 piece of apple wood (I CANNOT STRESS THIS ENOUGH)
5 hours total cook time at 250. 4 hours in the smoker and texas crutch them with Cookshack spicey sauce in the oven for the last hour.
Another Q weekender. I love this stuff. My neighbor came over and knocked on the door with a rack of ribs after smelling the pork butt asking me to cook them for him. I have a rib-o-holic next door. I also have the neighbor across the street following the aroma over to my house asking me if he could get in on the action and to top it all off I got roped into doing pork butts for the Christmas party at work. I am going to have to start charging.
