Anybody have good ideas for the leftover skirt once the ribs are trimmed? I smoked the Brisket part and it turned out ok, but I saved the skirt and don't know what to do with it?
I cut up spare ribs and use the left over parts and cook them 3 to 4 hours and they taste awesome. I think this part can be made similar to picninc ribs and there is lots of meat. They just need to work harder to get the meat.
I like to toss the skirt in some marinade, then, after the ribs are prepped and in the smoker, saute it fast in a really hot pan and eat it up with a fork and knife. After all, dinner is a long way's off.
