We didn't know what to make for dinner last night, so I went into the freezer to see what might be waiting. I found a couple Foodsaver packages of frozen, previously smoked items...smoked chuck and smoked tri tip. So I pulled them out and let them thaw. Into a 210* oven (still in the Foodsaver bags) and let them heat up for an hour.

"Holy cow, mother Mahone". They were delightful. Very tender, moist, smokey flavor. I don't know which one was the better of the two.

Mrs. Pags always thinks I cook/smoke way too much for the family, but the dinner couldn't have been easier to prepare or more enjoyable. I cleaned up after dinner, so I think she's beginning to see the logic of my methods. Well, at least now she better understands why the freezer is so stuffed.

I find leftovers to be awesome. I foodsaver lots of stuff, and things like pulled pork,etc., reconstitute well. I often find that leftovers taste better than the original serving ! I think this is mostly because by the time I smoke and serve up food, I've been exposed to enough smoke that I'm a bit 'numb' to the taste for a few hours. I also think that with leftovers, the smoke flavors have had a chance to 'set in'. Dang - now I'm hungry.
