Okay, so we're approach the holidays, any adivce on Turkey for those who might be new?

I'll start:

THAW the bird. No you can't brine a frozen bird, so if it's frozen, you need to thaw it before you brine.

PRACTICE. No, don't wait for the first time you ever do a turkey to be ON Thanksgiving. Birds are cheap enough. Do a practice run now. There are some many challenges, you want to have fun on TDAY, not be stressed out

Well I've only done two, so I could be one of the new ones that needs help...LOL!

I will make sure that my cheese cloth is more than one layer thick. I like to melt one stick of butter in a small dish in the microwave and let the cheese cloth soak it up after it's melted. I guess we all know that the bird is covered with the cheese cloth to help keep it from getting too dark? Pretty bird!
Don't use too much smoke!!

I remember first time I ever did a smoked turkey. I was using a charcoal smoker and everytime I added charcoal I didn't have any smoke so I added a few more wood chips. Couldn't eat the outer 1/4" of turkey because of the strong smoke flavor. 20+ years later and my kids still tease me about that one.

At least I won't have to worry about that with my Cookshack. Just a few ounces will do you. Smiler
