I don't even know what these ribs are called but they are very small and the butcher says they are for making sweet and sour Chinese ribs. I put some in the old Smokette today with a little sweet and sour sauce (actually an Atkins product so no sugar) and I'm here to tell ya those little ribs were incredible.Great appetisers. I used a few small chips, probably 1/10th of an ounce of Hickory and let them go for 3 hours. Yeeehaa. I'm just enjoying the heck out of my Smokette. Gonna do a 6lb Pork Butt tomorrow.
