The only thing I do differently when I have a load of 16 butts is to switch the top shelf with the bottom shelf halfway through the cook. This has worked great for me so far.
One other thing, I usually start off on the smoke setting. But when I have a full load, I bump it up to the 180 setting. With 16 butts in the FEC, the smoke setting runs at too low a temp; 100-120 for my liking.
When I cook 12 butts, I start at smoke for two hours, then 180 for another 2 hours, then 240 for the rest of the time. This helps to give it a little more smoke flavor.
But when you put a full load of 16 butts in, it is hard for the FEC to maintain the 130-140 temp so I bump it to 180 for the first four hours.
