I use a cast iron plate that I set on the grill, the can sits quite flat and I never had any problems ever...

I use the Spanek Vertical roaster in my 55. I cook a 12 to 15lb turkey in about 2 1/2 hours. I don't use a dripp pan. Spanek Turkey Roaster

I happen to run across one at Northertools of all places. The style that they had in the store was $9 and was the metal beer can style. I checked online and they have this style for $6 + shipping.

I know where you can get a style called the turkey sitter. It is ceramic and works great. No link, I get them in North West Arkansas, (479) 271 8490

This is only my opinion.. from my experiences. When I received my first CS (008) I had been reading the forum for a bit and there was a lot of discussion about beer-butt chicken.. so, I found a couple of nice beercan holders at WalMart. Tried them. Results weren't what I expected.. but, hey.. no experience.. kept notes and tried again.. ho hummmmm. There they sit.. unused unless I grill my birds.

I'm not sure what all the hype is about this method in a CS smoker. As I understand it, the process is supposed to keep the birds from drying out.. and infuse a bit of flavor in the birds. Well heck.. the CS is already saturated with moisture and are always juicy.. and, with my favorite rub on the outside of the bird.. any infused flavors are probably covered up.

I'll keep the can holders for my Weber or oven cooks.

Brinkmann.net is where I got my metal turkey sitter stands. Brinkmann has other smoker accessories too - some nice baskets for small items or a meatloaf. (But Cookshack still makes the better smoker unit !!)
