This is not about the cooking,but thought some of you sausage folks might appreciate the pix and techniques.

We are getting ready for our traditional pilgramage to "coonass" country and we always bring the large cooler back filled with smoked meats.

Jacob's in LaPlace is our favorite for andouille.
