Started cooking Wednesday about 5:00pm with 10 butts, avg weight 8 lbs each. Those came off about noon to 2:00pm. Lower ones first then the uppers. Reloaded about 5:00pm with eight nice choice briskets, just took on two smaller lower ones and the uppers are about 174, going to about 190. Might put on some more briskets to come off about 6-8:00 am on Saturday morning.

That would add up to 160 lbs of brisket and 80 lbs of butts with no lost sleep. 120 lbs of finished product should be good for 250-300 folks. But then we also have 36 racks of ribs, 8 cases of brats, 40 lbs of chicken, beans, slaw and two kegs. Should be covered.
