I made the Smoke & Spice recipe for pot roast and found it to be delightful. Rub the roast with your favorite rub, cut slits and insert slivers of garlic and of pickled jalapeno pepper, smoke for three hours, foil and continue for another 3-4 hours. Let rest, slice thin against the grain and enjoy. I used a chuck roast that was about 4 lbs. and a mixture of apple and hickory wood for the soke.
