OK, to be fair this isn't really a "Q" recipe but it is a recipe for shredded pork... Wait til you see this one:

1.5 pounds pork shoulder cut in half, fat cut off.
3C lightly salted water
1/2 onion
2 cloves ( insert in onion )
2 Cloves of peeled garlic
5 Peppercorns
1/2 t whole cumin
pinch of oregano..... Now here is where it gets "good"

Place meat in a sauce pan ( you know trouble is ahead ) Cover with the water and all dry ingredients. Bring to a BOIL. Skim the fat. Cover the pan and cover it. Simmer, not boil, for 45 minutes.

Cut meat in 2 inch chunks. Fit your food processor with the plastic pastry blade. Placing a few chucks in at a time, pulse until meat is shredded to your liking.....

This recipe will never be to my liking Big Grin .

Well now,to be fair, those folks in NM and down in our islands are prone to do things like that.

If you're a fan of Smokin's ol' buddy,Rick Bayliss,you'd do something like that.

You can fry that up with a little bacon drippin's,onions,and some ancho chiles and make great empanadas ,enchiladas,tamales,burritoes,tacos,or fry up with day old corn tortilla wedges, huevos,fresh japs and 'maters for breakfast.
