I tend to mop in the middle portion of the smoke. I like the butt to take on a lot of smoke, so I don't start mopping until it hits 140. Then I'll mop about once an hour. Even though it extends the cook by opening the door, you'll get a different effect on the bark. Just make sure you mop doesn't have a lot of white sugar, or it blackens up pretty quick.
