When I pulled the 6 butts yesterday there was no sign of the "butt gland". Do you think they shrink during cooking, or are removed at BJ's or packer ?

I have read of the "butt gland" in Rytek Kutas' "Great Sausage Making" book, but I've never really seen them in the butts I buy. This would lead me to believe that they are removed at the packing plant.
...I hope so, I may never be able to look another butt in the face, as it were.
FYI, they're not typically removed at the plant, they're too hard to get to. Sometimes the gland is there, some times it isn't.
As no one had asked about it before it wasn't an issue with most.

i have not been able to find one after smoking, either. i think that they either melt, or blend with the meat. its probably not something you would recognize as there, but something you would notice gone, if missing. like looking through a foggie window for years, then someone coming along and wiping it clean... you didnt notice the foggieness cause you were used to it, but now that clean window sure makes it alot easier to see. closest analogy i could think of....
