i have not been able to find one after smoking, either. i think that they either melt, or blend with the meat. its probably not something you would recognize as there, but something you would notice gone, if missing. like looking through a foggie window for years, then someone coming along and wiping it clean... you didnt notice the foggieness cause you were used to it, but now that clean window sure makes it alot easier to see. closest analogy i could think of....
