Morels Stuffed with Smoked Pecans
1 lb. Morels, cleaned, stemmed, chop stems
2 c. chopped pecans
1/2 c. unsalted butter
1 small onion, chopped
3 cloves garlic, chopped
1/2 c. celery, chopped
1 tsp. sea salt
1/2 tsp. fresh cracked pepper
4 1/2 c. dry bread crumbs
1-3 eggs, beaten, to moisten mixture
1/4 c. melted butter
Place pecans on an aluminum pie plate with holes punched in it. Start smoker set at 250 and get some smoke going. Smoke for 20 minutes. Remove and cool.
Melt the butter in a large skillet and add the chopped stems, and the chopped vegies. Worry that around until the celery is translucent. Add the crumbs, seasonings, and the pecans. Remove from heat and stir in enough beaten egg to thoroughly moisten the mix. Put in a pastry bag, or use a spoon to stuff the `schrooms. Stand upright in a baking dish just big enough to hold them. Pour the 1/4 c. butter evenly over. Bake at 350 for 20-30 minutes, until tender, and you can't stand it anymore cuz they smell so good!
