I usually find something that I could do or change to make something better. I couldn’t find a thing that would have made these tri-tips better. Rubbed with Pappy’s Choice Seasoning and a little crushed Rosemary sprinkled over it. Used a little Jack Daniels wood in the smoker and took them to 132 degrees internal temp. I did have to open the smoker about halfway through the smoke because The temp was going up to fast, and I needed them to be done at 6:00. Probably lost some of the smoke in doing this. I fired up the grill to get it hot so I could finish them on it. Had a flame out while I was in the house, and didn’t know about it until I went to put the tips on the grill. Changed out the gas bottle, fired the grill back up, and brushed them with a vinaigrette. This caused some really nice flair ups, and did a good job of finishing the meat. The nice thing was everyone liked it.
