On occasion my wife will purchase a precooked whole or ½ chicken when she is near her favorite foofoo store. I’ve never seen the cooking process but I believe they have a rotisserie oven. The birds are always golden brown.

I’ve eaten some of these chickens and the breasts are always mushy, without texture and there is no extra salt or herb flavor.

I’m wondering exactly what is going on with their cooking process. My first thought is that they have been brined too long but there is no extra flavor to indicate this.

Any thoughts?

I'm sure they're using cheap and enhanced solution birds (more profit for them). They're also overcooking them (they usually do) because they don't know what temp to really pull them at and putting them in the heating lights doesn't help.

A lot of those places cook them for looks only so they "look" pretty. You know, kinda how our moms cook fried chicken or tukey.

We all know the temp is the king.
