aarrggh!!! Have my 2 year olds birthday today, inlaws coming over and me with my nice new cooker volunteered to do pulled pork sandwiches.

Put a 7 lber on last night at 900pm at 225. Just checked now at 0830 and shes sitting at 175...maybe plateau?

Dont need to eat her until 100pm, so hopefully it will be good by then...should be.

It won't hurt to go ahead and turn it up to 250. I know you want to. It should be just right then if it goes ahead to 190 pretty quick. Just wrap double in foil, wrap in towels, put in cooler, pull at 12:30. Optionally, let it keep going and if it gets to 205 before 12:30, turn the smoker off and then remove the butt at 12:30, pull. Don't sweat it! Have a beer!
