2 days ago I did the initial seasoning on my new SM045 which went great and today I got to do my first smoke and it came out fantastic. Nothing fancy, I just took two 5 pound whole chickens, one for me and one for a friend, rubbed a light coating of garlic infused olive oil on them, gave them a coating of Cookshack Chicken Rub and popped them into the smoker along with 4 ounces of apple wood and set the temp to 225 degrees. The aroma coming from the smoker once they really started to cook was amazing. 4 hours later the Maverick wireless remote and the Cookshack meat probe indicated the birds were done. After removing the birds I wrapped them in foil and delivered my friends bird to him. My buddy unwrapped his bird and we carved it up and proceeded to give it a taste. OMG it was juicy, tender, had a wonderful smoke flavor and was just absolutely delicous I left my buddy to enjoy his present and I raced home to enjoy my chicken. I dont remember when I've had a better dinner I couldn't have made this great meal without all the great info and advice available on this wonderful forum.
