Took some ribs to a 4th of July party. Simple stuff, 2 racks of spares, a home made rub overnight and placed in cookshack at midday at 230F. Didnt touch them til they were done at around 5.30pm.
Foiled, walked over to the neighbours sliced and served. Stood back and listened to the raves from people that have never had a good smoked rib. The assumption was that I had slaved over them for hours. My secret, I didn't fess up....
