The first time I bought a butt my butcher also gave me the gland warning. She was also nice enough to point it out through the Kryovac. She said this gland is normally removed by the packers, but sometimes one slips through. The gland is marble sized and I seem to remember it being on the fat side of the butt. I have cooked many butts and I've only seen this gland one time.

as a former meatcutter i will say that there isn't really a gland there like the leg of lamb that has one...but there is one there on some of the larger untrimmed butts...it is on the oppisite side from the h-bone on the bottom(fat side) of the butt...and i don't believe it is harmful...
