I have 3 butts in my cs. They are for a party tomorrow at 1pm. I think I may have put them in the smoker too early, It is now 930pm (PST).. they are all at about 167 deg. I put them in at 4pm.. at 225 deg. ...
Ok, so, if they get done too early.. what is the best way to make sure they can still be served at 1 pm. I just turned my smoker down to 200 deg to slow the cooking down... any suggestions?
