I have 3 butts in my cs. They are for a party tomorrow at 1pm. I think I may have put them in the smoker too early, It is now 930pm (PST).. they are all at about 167 deg. I put them in at 4pm.. at 225 deg. ...
Ok, so, if they get done too early.. what is the best way to make sure they can still be served at 1 pm. I just turned my smoker down to 200 deg to slow the cooking down... any suggestions?

I would leave the smoker at 200* until morning. You didn't say how big they are, but assuming 8-10lbs, they should plateau at about 170*ish and stay there until 6-8am. Hope you have a therm because the time thing is a guess at best. Once they break through the plateau at about 185*, you could crank it up to 225* again, then remove at 195* internal, then foil and cooler until lunch? at 1:00pm. You can hold them in the cooler for about 4 hours, or you could leave them in the CS set at 170*. If you do that, I would leave them wrapped in foil.

You were correct, at 6am i checked.. the internal temp was 194... i was surprised, then i checked the other two butts.. they were at ,180 and 170 -- then i checked the first one again in other places... it was 180... I cranked the smoker back up to 225... now I hope the butts still in good shape... (this if the first time I have done more then 1) --- these butts are for a party.. my rep is on the line.. any more advice? it is now 745 am (Pacific Coast Time) -- the butt on the lower rack is currently at 183 deg. They have been in about 15 hours... Think they will be fine if a take them to 195 -- and wrap in foil and hold -- and pull an hour or two later?

As for getting to Calif from NC in a few hours, you must not know about CookShacks corporate jet. It looks just like an 008 with wings. It dosen't seat that many people though, but rumor has it they're getting a bigger jet this summer.
