New AmeriQue arrived on Wednesday morning about 10AM. Finished the initial seasoning with hickory about 4PM. Rubbed a 7 lb butt with the CS Spicey Rib Rub and injected with some "Smokin Okie" mustard/apple based sauce/mop. I set the cook temp to 225 and probe to 190 and started the smoke with 1 chunk hickory and 2 chunks apple about 9PM. Never opened the door until 4PM today when probe temp reached 180.(19hrs) I've read enough on this forum to have confidence in the CS and let it be done when it's done. Pulled it out and let it rest for 45min and sliced. I have to say it is absolutely the best Que I have ever tasted. It was so tender and moist and you could cut it with a fork. Could have done pulled pork very easy. What a fantastic Christmas present. It was well worth waiting for. My wife can hardly believe it; she thought it was just another expensive toy. Thanks CS for a great product. Now for some ribs and chicken this weekend.
