its 9:00 pm central time just got home from work (drove like 90mph because my new smoker arrived this afternoon and I'm way too excited) I'm seasoning it as we speak and will stay up to add some baby back ribs that I bought on the way home. My wife thinks I'm an idiot for being so excited over a "grill" as she calls it. I tried to show it to her, but she wasnt too interested, but I'm sure once she has a taste of the ribs she'll perk up. so I was wondering, is 4 hours at 200F with about 5-6 oz of hickory wood enough to season it?
