I was just notified that my new AmeriQue will arrive tomorrow.Please tell me what to do on the initial break in, then I want to smoke 8 chicken quarters and 4 slabs of baby back ribs. On initial break in, how much wood and for how long should I let it smoke? On chickens and ribs, what temp and for how long? Thanks for the help, everyone on the forum has been really helpful.

On my AmeriQue I broke it in by using about 4 oz hickory and used a fatty 8 lb pork butt. I cooked it at 225 for an internal temp of 195, it took 21 hours but I put it in the afternoon before and took out when done and wrapped in tin foil for about an hour, It was great, used it for pulled pork sandwiches. You will enjoy this machine.
