New Baby in the house

Congratulations. I have been working on the chicken and finally got it dialed in. I put thighs on smoke for two hours. Then crank it up full blast for about 20-25 minutes. The chicken comes out so juicy, it squirts everwhere and tastes great!

Thanks for the info FF. I will try that method. I have read that the skin is crisp if you use the bottom shelf. I will let you know.

The skin comes out kind of medium. It's not real crispy, but it is not rubbery either. I mainly use the top two racks. When I cook this way with the skin down and I leave the old grease on the racks, the skin never falls off. It sticks very well.
