One of the ways to stop this black (or grey) goop from occuring is to clean the exhaust hole on top of the smoker after every cook. I use a round wire brush for cleaning a 10 gage shotgun bore. Got mine at Walmart for 97 cents I think. Push it down thru the hole 6-8 times, then using a rag wipe off the fitting on the inside of the smoker. If you dont clean this, moisture accumulates on the edge of this hole and drips onto the meat, carrying the off colors people see.

At least this procedure has worked for me.

You've posted a couple of questions and my advice is to read through the owners forum and the owners archive.

That being said, and the internet being what it is, don't focus on the "issues" owners have with their smokers. Everyone has issues with their smokers. but here, we help resolve them.

Like the black goop, and I agree with Cadillac's response, there's always a solution. Black Goop is just creosote building up in the exhaust and a regular cleaning will prevent buildup.

And the #1 reason to buy a CS is that there IS a forum like this to discuss everything. Not many smokers have a forum like this for owners to come to.
