I first saw a Cookshack smoker at a convention in Reno, NV back in 2001 or so. Wanted one ever since. Now that I finally have a real job and some disposable income, I bought one for myself for Christmas. It came a couple days ago and, after a good seasoning, I tried some baby backs last night. Despite the constant warnings on this board, I used too much wood -- 2 medium sized hickory chunks. The end result wasn't bad, just a little stronger than I prefer. Have a butt I will try this weekend, but will only use 1 chunck of hickory. Wish me luck!
This is a great forum...I appreciate all the advice and guidance from the "seasoned" (notice I didn't say old) CS'ers!

If this is such a good forum, why didn't you listen to us Big Grin

What kind of wood did you use? They will have different effects. And with butts, they tend to handle it a little better, but you're the best judge of smoke.

That's why it's hard to give a recommendation for amount of wood to you. You think 2oz is too much for ribs and others want 4oz.

Thanks for the vote of confidence, maybe some one will believe us when we say 2oz of wood is too much. Wink

But it's understandable, if you're moving from a smoker that uses wood for fuel source, you'd think you needed a lot.

I also tried baby back ribs for my first smoke after seasoning. They came out great. As far as the wood, I weighed a few average chunks to get a feel for how many ounces each chunk weighed. I found with the wood I recieved with the smoker, that each chunk weighed about two ounces. On my ribs, I used one chunk that was broken in half (two pieces ~one ounce each)This all of course depends on how large the chunks are, if you can weigh some out to get a better idea, it may help.
