Hello I have just made my mind up to order a CS Smokette will place the order with Karen tomorrow morning. I have been using a (sorry to say this) a Brinkman smoker for several years and am not what you would call new to this. But now will have to learn how with a different style I guess. Have been reading your forum for some time trying to make up my mind on what to buy and found it to be an amazingly good site with lots of ino. Here is my question. Have noticed you talking about the size of turkey that is safe to smoke about the lenght of time for the bird to be in the cold area too long. I have in the past always done a large bird and not had any problems with it but with the Smokette will two 12# or say two 10# birds fit in at the same time? Or do you think I could continue to cook the larger birds?

I've only done the breast,and I've been pretty happy. My suggestion to you wold be, is to opt for the 5 rack system instead of the 3, and that might give you the room your looking for? I have the 5 rack one and I can fit a lot more jerky and fish in it. At the very least I would ask Karen. Good luck! Please keep us posted on the turkey results as that time of year is comeing and I wish to do a couple myself

I don't think you will get 2 turkeys in the smokeete. I think part of the issue with the larger birds is that they could dry out over the extended cooking time needed.

Oh I started with a little brinkman charcoal/water smoker. In my opinion you will be far happier with that turkey or shicken in the brinkman than you will be with it in the smokette.

I have both, and still favor the brinkman for birds, it makes for a better looking product, and a better tasting skin.

I just bought a gas smoker from Cabela's that I want to try out on birds.

Everything else I have done in my smokette has been great.

I've done quite a few turkeys in my 008.
I usually get 7-10 pounders just before Thanksgiving when they are on sale and keep them in the freezer till I want to use them.
This size usually fits well on the rack.. and if it's a tad too large.. I'll split it down the backbone and put half on two shelves. Sometimes I'll finish in my big Weber or the oven to firm up the skin.. but often we'll just peal the skin off and forget that part.

You'll love the flavor and the leftovers make GREAT turkey soup.
Thank you for all the help. I ordered the Smokette this morning from Karen. I did get the 5 rack side deals so as to be able to move things around. thanks for that also ordered the rib hooks seeems as though allot of you prefer them The cooker is supposed to be home by end of week and am looking forward to getting it. I do not smoke that many turkeys mostly pork, beef and fish. So that is why we went with the smaller cooker. Will let you know how things turn out.
