As of yesterday, I am the proud new owner of an IQ4 FEC-100. Is it better Confused to add meat to the cooker before firing it up or after it comes up to temp and settles in? The reason I ask is that it I'm concerned that if the meat were added after the cooker comes up to the set temp, it seems that the controller may sense the a drop in temp resulting in an overshoot that may take a while to settle down - or am I just stupid? I'll take all the advice I can get.

Welcome to the neighborhood.

You want to start up your smoker and get it to temp. Then put the meat in and let the smoker adjust itself out. For large loads of meat, greater than 30-40 lbs., use a slightly higher temp as it will be easier for the smoker to hold the temp.

35 degrees isn't an overshoot to me

135 is.

I wouldn't even worrry about it and just use it a bunch of times and see how it works.

I've mentioned how sometimes, with a hot burn (especially when you start from zero and set it on 300+ it will really overshoot). I just open the door and "dump" some heat and it settles down just fine.
