I've just ordered an Amerique and I'm trying to learn as much as I can while I wait the 2-3 weeks for it to ship. Since accessories/wood/etc. ships free on the initial order I've included a cover and cold smoke tray.

I'm looking for advice as to what wood to order. Shipping prices are significant for wood so I'm better off buying now but I've never used anything besides hickory in my smokers. For a home enthusiast, what types and quantity of wood do you recommend?

Dave -- Welcome to the forum and congrats on your purchase. You'll not be disappointed in your Cookshack purchase!

As Buckeye said, it depends on what you are smoking. Hickory is a little strong but personally I like it. I recently did a poll for smoking pork butts. The majority of people voting prefered pecan or apple wood over hickory, oak or cherry. Personally I don't think you can go wrong with pecan - not over-powering yet gives a distinctive smoke flavor.

It really does depend on what you are smoking. Chicken takes on smoke faster and easier than pork or beef so go light on whatever you use. IMO, it's easy to over-smoke beef too but not near as bad as chicken.

Start off light and add to suit your tastebuds. Remember, these are very efficient smokers and use little wood. When people say use 2-4 oz of wood take them seriously. Two oz of wood is about the size of a golfball.

well you asked for advice here goes.
myself i would get the wood i am most familiar with. you already know what taste profile that you like so get the hickory and cook thru the whole box. keep notes during each cook on the weight that you used and what the final taste was. by doing that the only variable you have is your new smoker and that will help you master the thing. after that play with wood and again keep notes. all that said i ended up using 2/3rds oak to 1/3rd pecan but it took a while to hit on that combo.
