High currently building my own electric smoker from a large whiskey barrel. I have been seeing some referances to a water tray but i can find no description of where it sits( on or off the heat what you can fill it with and what it does to help the cooking. Anyhelp would be much apreciated.

Having lived overseas, I know it's hard to find good information.

The water pan goes just above the heat source as a "baffle" for the heat.

You can go to this forum, for the Weber Smokey Mountain smoker and see what one looks like:

Hi Kev, I'm susre you already know this, but you're living in a beautiful part of the world. Got to travel Scotland a few years back and thoroughly enjoyed the trip. Saw the military tattoo in Edinburgh, visited a bunch of castles and one of the highlights was staying in the Campbell House on Loch Lomond. The only downer was that the day I was at Loch Ness old Nessie was being very cantankerous and refused to show. Big Grin

BTW, this forum is the place to be if you want to learm BBQ. Lots of luck with your project. Let us know how it turns out. Post pictures if you can.
