During the week I don't have time to smoke food so, I use my grill (gas). Although I have used wood chips to add some smoke flavor, this does not work well (not enough smoke flavor), Thus, I start the meat in the smoker (20 min or so) and then finish it in the grill. Two days ago, I had the best pork chops I had for a long time:
Quick and Smoky Pork Chops
1-1.5 inch thick pork chops
CS Spicy chicken rub
Fresh ground black pepper
10 small wood chips (apple or cherry)
Rub the pork chops and add some freshly ground black pepper. Place chops in smoker with a few wood chips (I like apple or cherry) for 15-20 minutes. 10 minutes after placing the chops in the smoker preheat your gas grill. Finish the chops in the gas grill (about 4-5 minutes per side).
Total time = 30 minutes (compared to 2 hr if done all in the smoker). They are still very juicy and smoky. I have tried both brining and w/o brine and both remain very juicy).
