I smoked an 8 lb butt using 4 onces of wood, it turned out very flaverfull. This Saturday I will be cooking 3 7-8 pounders (22 lbs). How much wood should I be using, say if it's hickory?
Are you going to be smoking on more than one shelve if so you might want to put the probe in the lowest but and when it comes to temp check the upper one with an instant read unless you are using more than one probe. I have found in my smoker the lower shelves get done before the upper shelves.
