After my first run with the SM025 i can honestly say I'm impressed.
Started out with two Angus briskets and my usual dry rub. I didnt do anything out of the ordinary and tried to keep it as basic as possible so I would have a good base line for the next brisket.
Number one brisket(bottom rack)finished first as expected.It was a little dry but good. As I said earlier I didnt do anything other then place them in the smoker and let it go till proper temp was reached so this was not entirely unexpected.
Second brisket(top rack).........ABSOLUTELY FANTASTIC IN EVERY WAY !!!!Tender,moist decent bark.And I must say equal to some of my best from my stick burner over the last twenty years.
With some minor adjustments for the bottom brisky,I see some fantastic meat coming out of this thing.
