Soaked a 3.5# corned beef (point cut) for 20 hours, 4-5 changes of water. Used miniscule amount of spices that came with it, plus A LOT of cracked pepper, some dry mustard, coriander, garlic.
Used 5oz. of hickory, set at 225*. Turned it down to 200* for two hours while at Costco, back to 225*. Total time was 7.5 hours to 190*, wrapped in foil for 30 minutes.
Incredibly good! Sliced thin with electric knife, piled on rolls with mustard, swiss, onions; outstanding!!!
Headed to Albertson's, they have St. Pat specials, point cut $.67- will take some off their hands for future use!
