Just fyi, 85 degrees here this weekend. I am not complaining. So I see why you all are jeolous.

I am an avid microbeer fan and would definetly show you a place or two to have a great beer. I am currently sipping on a IPA from Alpine beer company. It's might good and comes in at a whopping 7%. My only regret is that it is going to be paired with baked chicken and not smoked.

Rhino Chasers was located in Huntington Beach. I have never tried any of there stuff. I have only been a beer fan for a few years and have tried just under 900 different beers.

Got a question for you...How long does the smokette take to "put together"? I imagine just the casters need to be placed in the holes. Wondering how long before I will be seasoning from the time I first touch the box. Cheers!
Dangit - I was so excited & focused on getting the smoker that I forgot to have a beer while setting it up. Figure a half an hour for time, if that. The casters & control box are a sinch to hook up (the control box has a plastic module to attach to the smoker and another electronic dohicky that can only be connected one way due to the two tabs being different sizes). I'm sure if you were two beers in you could still figure it out. I didn't see any instructions for installing the casters, but then again, if you've installed any kind of casters before, you know where you should put the two with the wheel locks. They include a nice wrench for installing them & you need a phillips head screw driver to get the screws out to mount the control box in place. I think there were 8 of them.
I spent a few minutes lining the bottom of the smoker & over the heat deflector and it was ready to go.
Now, as for my first smoke... I smoked almonds & pecans & followed the recipe in the forums which used Sams Club Maple Syrup & a teaspoon of the spicy chicken rub. I totally followed that recipe for the almonds & per my wife's request I tried did the pecans with maple syrup & cinnamon. I had the almonds on the bottom tray & the pecans on the high tray. Oh - to keep those puppies in place, I found some foil grill sheets at our grocery store $.10 for two of them & that kept them from falling through (the sheets had 1/4" round holes in them to let the smoke through).
So I made about a pound each & my experience was the pecans came out awesome & the almonds are good, but some of the maple syrup charred on the bottom of the almonds & not on the pecans. I wonder if this was due to the almonds being closer to the heat source, but maybe next time I will try to stir them while smoking, or I'll try smoking less than the 2 hours recommended.
Aside from that, even my 2 1/2 year old daughter likes the smoked pecans. We put some of those on her ice cream last night & she ate every single one. On to ribs tonight...
