Christmas PB was mutch the sama s before ,only i set temp at 200, and time for 12 hrs it went as follows
start 1:15 pm

CS cool , meat 42,44,44
3:40pm
CS 223o, 151,150,152

5 pm Vinager Moped
CS 232, 160,160,161

8pm
CS 231 170,170,175
It seemed that the temps frooz, must have been cause the door was opened for moping

10pm 235 temps still as 8pm

00:30am CS 238, 185,185,192,

Shut down cooker, pulled the meat it was just perfect see the pictures
Lets start cooking

Nice pix and glad it suited you.

As you may be aware a butt could set on the 160* plateau for several hrs,before it breaks out -around 170*

We find cookers like yours have a temp they kinda like to run at.

Mine liked to run at an actual temp, at the rack, of about 235*,for butts.

At 200*,the plateau can be especially hard to pass thru,and a pull temp around 195* is tough for the cooker to achieve.

Just a thought.
