My wonderful wife got me some wood for Fathers day. By mistake she ordered pellets from CS NOT the chunks. I decided to give it a try. they seem to be GREAT! much eaiser to measure/weigh. the door on the wood box closes every time with out cutting or fitting the wood chunks. I think the freight is more cost effective on bags of pellets, eaiser to blend and on and on! The question...is there any reson I shouldn't use pellets exclusivly????

I did 6 butts this weekend. I used 2oz.(chunk) of hickory with 6 oz. apple pellets. the meat was fine. It WAS a little light on smoke however that may be from the mild apple wood. I usually use 6+ oz.of hichory for that type of smoke. The pellets were burned black but NOT ash. completly whole and in good shape. I will continue to experiment. Thanks for the advice.

since we use both our fec and sm150 we have found that the pellets make our lives a lot easier since we do not have to carry both chunks and pellets. the biggest thing you need to do is make an aluminum foil pouch for your pellets and poke one tiny hole in it. that way 1.5 ounces of pellets will smoke for around 45 mins. you might like to use more pellets to get even more smoke but our best results have always been to make sure to put them in the foil pouch with only one tiny hole poked in it.

As Bill mentioned, the pellets work well for me, and I don't have to worry about customs bringing them in. ( I had about 80 lbs. of wood chunks burned at customs here in Taiwan.)

Thanks to all for the help. I did 3 slabs of ribs. taste testing, thats another topic. I put in ONE chunk of hickory, and 5oz. of apple. I put the apple pellets in foil stuck my index finger in the center and wraped foil around finger. Thus creating a foil pouch with a hole in the center about the size of my finger. 250* for 5 hours, opended door half way to turn and spray. after finished, the hickory was gone and I still had a lot of unburned pellets. wood flavor seemed to be fine. I am thinking of cutting back on the pellets. Oh, the ribs were GREAT!!!
