here is how i do it peggy's sm150 and the taste matches what comes out of my fec.
the following is for heat pellets used in an fec. if you are using flavor only pellets i would drop the quantity by an ounce
make an envelope of aluminum foil
pour in 4 ounces and no more than that of pellets
seal the foil really tight
put 1 and only one pin hole in the foil and place that into the wood box.
set your heat in the 150-160 range and put your COLD brisket into the cs
hold that temp for 2 hours
reason for cold meat is smoke uptake stops at around an external meat temp of from 145 to 165 degrees.
after 2 hours go to about 200 to 225 heat setting
at 8 hours (this assumes about a 10 to 12 lb brisket) wrap the brisket in foil, put it back in, raise the heat to 250-275 and let go to an internal of around 185-190.
when you hit that just unwrap to let her bark up some.
nice thing is the cs and sm's hold more moisture than an fec so adding like juice or beef broth isn't really necessary.

Hey Smoky, I have done some experimenting with pellets vs chunks. I use both. I hope to switch to pellets completely one day. Prisonchef has forgotten more about smoking than I will ever know. BUT, I put pellets in a foil liner of some sort, and just let it burn! I will add a few more oz. of pellets then I would use with chunks. maybe double. ie, if I thought I needed 4oz of chunks, I would use 8oz of pellets. cook as usual as far as time and temp. I cant tell any difference. try and keep notes.

Is there a reason you would want to use pellets,instead of all the wood you have available in Texas,to cook a brisket?

Pecan and oak should be everywhere.

The Cookshack was invented as a brisket cooker,and the system is almost foolproof.

You can use the shavings from the "spit & whittle" club down by the courthouse,if you want.

I'd guess every box store in Tx sells bags of chunks.

Just curious,if you have a specific application.

Just wanted to experiment with some different fuel sources. I tryed the pellets in the foil pouch with the pin hole last night and it worked real well. I want to thank my fellow Quers for the suggestion. It will work better will doubling it like David A recommended. Thanks again to Prisonchef313 and David A.
