Looking around the site to find something new and ran across this older post. Asian babybacks - Char Siu

Sounded interesting, so off to the local asian market we go. Picked up a couple different seasonings.

Using this for the marinade. The powder is bright pink and after you add water it's neon red.


And going to use this for the glaze when they're done. May add some honey to it.


Gonna let marinade overnight then on to the smoker tomorrow afternoon for dinner.

Here's a marinade recipe I used to prepare Char Siu. I used strips of pork butt vs ribs but it would work well either way. The flavor was excellent as I didn't finish the pork with anything else.

I used a 300 cook temp without wood. Using your oven would work equally well but advise cooking over a water pan to increase moisture.

Char Siu Marinade
3/4 c Hoisin sauce
1/2 c Soy sauce
1/2 c dry sherry or Mirin wine
1/3 c honey
1 T brown sugar
2 tsp 5 Spice

You won't get the radioactive red color but adding red food coloring would do the trick.
