Picked up a package of spares the last time I visited Sam's. So today I'm smoking those babies; trimmed them down to SL style and they are ready to go with a light sprinkling of salt, fresh cracked pepper and CS Rib Rub. Reserved the flaps and smaller trimmings for ground pork for later. Preheated the smoker to get the smoke going really good before putting in the ribs. Set the smoker to 260 and timer for 4.5 hours; we'll see how they look then. Can hardly wait.
