what i have done is left the skin on while smoking and then when it was done removed the skin, took the fat off and dried in a food dehydrator with no ill effects to my 2 greyhounds.
here is a good recipe that moose and corvette love if you want to try it

1 lb chicken livers
1 cup corn meal
4 eggs
pinch of salt

whiz the ingredients in a blender till smooth
put in greased 8 x 12 pan
bake at 350 for about 30 mins or until a tooth pick comes out clean

it should work ok for puppies as greyhounds have kind of sensative stomaches

i saw those on the westminster show. they sure are pretty.
mine are retired racers i adopted. moose my 85 pound male was raced and trained by women so he was kinda shy of me but the liver brownies brought him around lol

but ya know cooked they aint half bad
