Before I got my smoker, I was a grill guy, and have been making pizza on the grill for years now. I use pizza stones at about 600 degrees, I've learned a lot reading some brick oven forums on the web.
Tonight I had some leftover smoked chicken and decided to use it on our pizza. It was a huge hit, my family said it was one of the best pizzas I have made them. Here is what I did:
My standard pizza crust
Cookshack Spicy sauce instead of regular pizza sauce
grilled onions
diced mango
3 Jalapeno peppers, most of the seeds removed and grilled with the onions
smoked chicken from the other night
fresh mozzarella
The Cookshack sauce is one of the best pizza sauces I have tried, and was perfect with the smoked chicken. I'm glad to find a use for leftover smoked meats, I bought a 55 and always smoke more than we can eat.
Anyone else out there using smoked meats on pizza?
