Hello everyone, hoping you are all having a wonderfull holiday season!
A couple of quick questions....

1. I have seen alot of postings that mentioned the use of a Polder Thermometer and I was wanting to know if you actually shut your smokers door on the wire or if you drop it down into the round cap on the top where the smoke exits?

2. Also, some of you have mentioned that you use a cooler when you are letting your ribs "rest". Are you using a plastic heavy duty cooler or just a simple styrofoam cooler?..Is there anything you place the ribs in other than foil , and how long does it keep the ribs warm?

I work the first shift at the factory, and if the cooler kept the ribs warm that would be a good way of taking some of my fare to my fellow workers....Hey! maybe a promotion?.....yeah right!

1. Wire down through the vent hole.

2. Whatever cooler you have handy. I have a couple of different plastic styles. Use one large enough for the item to fit, but without a lot of extra room for air. Smaller cooler the better. Some will double wrap with towels (I don't the towels get stained). Some wrap in newspaper. They key is to keep the ribs or whatever warm. Usually they'll stay warm to the touch for hours.
